I’ve always loved tuna in all its forms, especially the good quality stuff out of a can that has been preserved in olive oil.

This is brilliant served with crunchy celery and is equally good with bread or crackers. I’ve also enjoyed it as a decadent sandwich filling accompanied by my smashed broccoli.

This is super quick to make in a food processor, but you need to make sure your butter is soft. If you are a good minimalist living without a food processor, just smash everything together with a fork. It will be chunky and rustic, but no less delicious.

1 can tuna in oil (185g / 6oz) with chilli
75g unsalted butter, softened
1/2 lemon, juice & zest
2 anchovies, optional
celery, to serve

1. Drain tuna, discarding the oil. It’s up to you whether to include the chilli or not.

2. Whizz tuna, chilli (if using), butter, lemon juice and zest and anchovies in a food processor.

3. Taste and season. It may need a little more lemon juice.

4. Serve with celery sticks that have been sprinkled with salt and pepper.

variations for dietary requirements:

dairy-free – Replace butter with extra virgin olive oil. Start with a few tablespoons and keep adding until you have a good pate texture.

vegetarian / vegan – Unfortunately I can’t just tell you to use tofu for this one 😉 Why not try making your own hummus: recipe on stonesoup.

troubleshooting guide:

too bland – Add more salt, pepper and lemon.

not whizzing in the food processor? – The butter is probably a little too cold. Leave it to stand for a few minutes or chop butter into smaller pieces.

too salty? – Add a little extra virgin olive oil to dilute it. Next time use unsalted butter.

no food processor? – Soften the butter until almost melted. Smash tuna with a fork and stir in lemon juice and zest. Combine tuna mixture with the softened butter and sit in the fridge for a few mintues to let it firm up.

leftover potential:

Excellent. Keep in the fridge and remember to allow it to warm up a little before serving.
Also wonderful as a sandwich spread.
I had it the other day stirred through a bunch of cooked broccoli and it was heavenly.
