I’m a big fan of all food but vegetables hold a special place in my heart, particularly now I’ve started growing my own in my little back yard veggie patch.

Last year I decided to go vegetarian for a month to expand my horizons and take the chance to really explore the world of vegetables as a main course.

While I really enjoyed what I ate that month, I found myself missing my bacon. So this year I’ve adopted a more moderate approach to vegetarianism by going meatless on Mondays.

One of the things I found most frustrating as a vegetarian was eating out.

Most restaurants tend to focus on carb-centric vegetarian offerings like pastas, risottos or sandwiches. While there’s absolutely nothing wrong with the occasional carb-fest, I wish there were more places focusing on making vegetables the star of the show.

Q. How exactly does a virtual cookery class work?

A. The course material is uploaded to the password protected website. The material includes a detailed video and written transcript discussing the topic. It also includes written recipes each with a short instructional video. Each recipe also has a written, detailed problem solving guide and potential substitutions for different dietary requirements.

You can review the course material in your own time. It will be up to you how many and which of these recipes you choose to prepare. There is a private discussion group where you can ask questions, interact with the other students and upload pictures of your own creations, if you wish.

prepare ahead?

Avocado can go brown if prepared in advance and salad will go soggy so best to make just before you’re ready to serve.

leftover potential

The salad leaves will wilt and the avocado may brown a little, but some people don’t mind that.

variations for fun

carnivore – avocado and bacon are great friends. Replace the almonds with some crispy fried bacon pieces. Add in a few halved tomatoes for a classic BLT salad.

no baby spinach
– just substitute in whichever mixed salad leaves you have on hand.

nut-free
- replace the almonds with some halved cherry tomatoes, for colour OR some finely diced red onion for crunch.

mexican salad – Replace lemon juice with lime and toss in a little dried or fresh chilli to spice things up.

problem solving guide

avocado browned – next time try choosing an avocado that feels firm, rather than squishy and soft. For now just dig out and discard the icky bits as best you can.

too acidic – I’ve intentionally made this dressing quite punchy, but lemons can vary in their strength. If you find it too intense, toss in a little more olive oil to mellow things out.

too bland? avocado needs some seasoning to cut through the fattiness so be generous with the salt and pepper. A little more lemon may also help liven things up.

serving suggestions

Wonderful as a simple Summer meal on it’s own.

Or serve as a substantial side salad to grilled halloumi or roast mushrooms.
