quantities for different serving sizes
It’s really important to match the number of eggs to the size of your frying pan. I could squeeze 3 eggs into my little frying pan pictured above, but if I wanted to fry eggs for more people I’d either do it in batches or use a larger pan.
For me fried eggs are best straight from the pan so they’re still hot and crisp at the edges and the yolks nice and runny. And since they only take a few minutes to whip up I wouldn’t try to prepare in advance other than making sure I had eggs out of the fridge.
If you’re looking for something to prepare ahead, I’d go with boiled eggs.
variations for dietary requirements & fun
vegan – No eggs for you! Stick to lentils or tofu.
carnivore – Feel free to fry a few rashers of bacon in the frying pan first then quickly fry your eggs in the bacon fat
burning on the bottom – The tricky part of frying eggs sunny side up like this is getting the heat to travel into the egg enough for the whites to get set. Next time try a lower heat upfront and use more oil so you can splash a little hot oil over the top to assist the cooking process. The alternative is to go for ‘over easy’ eggs and flip them half way through cooking so both sides get cooked evenly. But they won’t look as pretty
‘snotty’ whites – This means you haven’t quite cooked the eggs long enough. Next time leave for a little longer and don’t forget to spoon some hot oil over the eggs. It also helps if the eggs are at room temperature before you start frying so don’t forget to get them out of the fridge first.
Great on their own with a little salt and pepper. Also lovely with any of the lentils or beans covered in this weeks recipes.
truffle eggs – Serve with a little shaved truffle, truffle oil or truffle salt sprinkled over.
saucy eggs – Serve with a drizzle of Worcestershire sauce.
luxurious eggs – Serve topped with a few slices of smoked salmon and if your budget stretches that far, a little caviar.
Tricky to reheat but you could eat them cold. Not ideal though.
